

I feel a bit like I've hit restart today. I got my first supply of Shakeology today (YEAH!) and started things off with my first shake for lunch. I tell you, it certainly doesn't take like something that was around 300 calories. I used just a half a scoop (Lois recommended that for the first three days) along with ice, about 3/4 cup vanilla soy milk, and a small handful each of blueberries and raspberries. My final verdict? YUMMY!

I also did my weekly grocery shopping today. I'm thinking that I will need to hit the store once a week for fruits and veggies, and it will make the approach of meal planning easier. This week I focused on adding some new veggies (cucumbers, broccoli, carrots, radishes) that I can use in more than one thing throughout the week. I also bought two rotisserie chickens that I will be shredding once they cool. I'll be putting them in small bags to freeze, then take out as needed. Lastly, I bought a bag of brown rice that I'll be making - again, because I will be able to use it in more than one dish. I am planning on:
Chicken burritos with brown rice, black beans, tomatoes, plain Greek yogurt and cheese
Baked potatoes with chicken, broccoli, mushroom, plain Greek yogurt and cheese
Stir Fry with chicken, broccoli, carrots, mushrooms over brown rice
Cucumber and radish salad with a yogurt dressing
It's nothing fancy and it doesn't have the biggest variety, but it will get me eating healthier and more regularly throughout the week and ensure I don't get home and stuff myself silly because I don't take the time to eat while I'm at work. I'm feeling better, and ready to face the week!
